finally after a week

June 22, 2010 at 9:17 pm (Uncategorized)

Yeah I know it has been a week and I still haven’t posted. To be honest I started this post a few times but then I let it go another day or two and totally forgot my thought processes. So I will be posting today. Time for the week wrap up. As you know on Tuesday of last week I went to my cousins, but what you don’t know is that after I was there for the night, I also then spent a few hours at my Oma’s(grandmas) and then spent another night at my brothers. The point of bring this up is because it was the first time I ever really had to deal with temptation in the diet. At my cousin’s house, I thought it wouldn’t be that difficult to find food to eat because my aunt was on a similar diet. This was to a point true, minus a few things, but the real issue was that there was also plenty of food I wasn’t allowed to eat. I can guarantee that some of that food I really wanted to have.  Another issue I had at my aunts house was caused by my own fault. I didn’t have enough protein there which made me get a headache among other things. The house that had to have the most temptations at was my Oma’s. At my Oma’s I was kind of used to being able to eat all the food I wanted when I was over there. Alougth this time I wasn’t able to eat any of the food there, And worse of all they had almost no fruits or veggies there so I had to leave before the next meal. I did have a snack though and I cleared out all the fruits they had there. My Oma had some cantaloupe. I ate all of it. Then I left there to go find food about a hour later. Then I went to the store and bought some eggs, nuts, and a bunch of fruit to make sure I could live the final night at my brothers. Before I got to my brothers, I ate some of the nuts and a banana because that is right around the time I started to realize that I was having some protein issue. Then when I went to my brothers, I pretty much had eggs for my last meal/snack. Then in the morning guess what I had, More eggs/fruit.  I had The same for lunch. So by the time I got home (Friday night) I was tired of eggs and tired of the diet.

Saturday morning had interesting results. I didn’t lose a pound over the three day trip. That kind of depressed me a little. Also Saturday morning was the day my mom and me where going to start dairy, and seeing how I did with wheat. I was not optimistic. It turned out that I had the right to be thinking this way because come Sunday afternoon I had to call it quits, a day before we were supposed to stop testing.  Dairy made me bloated, gassy, gain 2 pounds and an odder thing was that it made me feel hungry no matter how full I was. I mom brought this up to me after we were testing. Before mom and I started this diet, We always complained about how we couldn’t tell if we were full of not. I guess that maybe it was because of the dairy.

Finally on Monday I woke up feeling better it was like I body knew I wasn’t going to eat poison (dairy) anymore. I had lost the two pounds I gained, and all symptoms where starting to go away. Then today finally ended on a good note after not losing weight for a week I lost 3 pounds. Bring me down to 327. I’m finally in the 320s range. I haven’t been this light in a year.

(sorry for the roughness of this post I am tired after work and probably sucked at editing.)

Wow is it late

June 16, 2010 at 7:28 am (Uncategorized)

Today I am at my cousin house so I did not know if I was going to be able to write blog, but I found some time. My mom and I have also finished testing wheat. I was happy that I was able to try some new food, but I got disappointed really quickly. I had to have 100% whole wheat bread or 100% wheat product. The first time I tried wheat I had a piece of toast with a perfectly fired egg on top of it. It was super good, but after I had the bread, I started to cough. I thought maybe that it was because of allergies. So I didn’t stop testing. I had wheat starting at lunch and continued with the rest of the day. The next morning I awoke in my bed, stiffer then a board. It seemed like every joint in my body and to pop, and it took me about 30 minutes just to get out of bed. My knee was also killing me more then the first time I walked, but at first I did not equate that with the wheat. (seeing it was the day after I had walked 5 miles.) I continued testing that day and awoke the second day(Tuesday) feeling stiffer and my knee felt just as bad as the first day. That is when I knew for sure that wheat was making me stiff and my joints hurt a little in some places. I don’t think I will be having wheat again on my diet. My mom on wheat lasted a day. She at first felt a little itchy and then the next morning she felt itchy all over. That is when she stopped having wheat.

Yesterday was my last official class day for the diet. So I have now been officially on the diet for 5 weeks. It also means that I am now on my own. The presenter pretty much just told us about “ A diet for the rest of our lives” in short it is a little less strict the elimination diet but I will get to talking about that when I am done testing.

As for today, I just have had a normal day: it was a day with northing to do. I didn’t walk seeing that me knee is still hurting. Then around 2 I left to for my cousins house and arrived around 3. It’s actually not that bad trying to eat here because my aunt is on a similar as me, but it is not quiet the same so I still have to watch out. But I am running out of time to write and I still need to edit it. So that’s all for now folks. I will try to write something on Thursday if I get home early enough. Otherwise, Friday will be the next post, and I will be talking about the start of my dairy adventures

daily post/ last nights dinner

June 14, 2010 at 1:52 am (Uncategorized)

I guess that today I will explain part of what to do on week four, seeing that today I started adding wheat to my diet. So on week four we are going to be testing four foods wheat, dairy, corn, and peanuts. Today I will explain how to test the wheat. My mom and I will be testing wheat for two days. We must have wheat at every meal expect breakfast. This is because our presenter does not want us having gain for breakfast. (no toast :( ) After testing for two days, we have to mark down all the symptoms we had with the food. Then wait two days at least, and if the symptoms are still there wait until they are gone. Then we cannot have wheat again until we have finished testing the other items. I will give a wrap up in the coming days of how testing went and how I am feeling.

Today is Sunday and every Sunday I go to church, but today I decided to, instead of driving, walk to church. The walk is about 5.3 miles from my house to the church, and this walk took me a one-hour and forty minutes. It has been a few hours now after the walk and my right knee is hurting badly, again. This also happened to me the first time I walked as well. I think I might be putting to pressure on my right knee when I walk. On terms of food, it was a food-clearing day. I ate the bit of leftovers we had, finished off the eggs and then ate cauliflower among other things. I still don’t know how I feel about cauliflower, it tastes weird but when you are hungry it will do.

Now I bet you are so curious about that picture. Last night’s dinner as you can see is a soup with a salad, that had dressing on it. To cover the salad it is bagged lettuce with olives (lots of olives) a few mushrooms and a homemade dressing on it. The dressing is what I call the “Poor mans vinaigrette”. My mom has told me many times now that it is not vinaigrette but I don’t care that is what I am calling it. Anyway, what I do is I steal my mom’s mayonnaise recipe. You find that recipe here. (http://www.foodnetwork.com/recipes/alton-brown/mayonnaise-recipe/index.html) Just a little Fyi though, my mom didn’t add the sugar and she used olive oil. In addition, with the soup recipes there really isn’t one. From what I understand my mom just kind of puts things it the chicken stock, allows it to cook and then calls it done. Oh well, at least it tastes good. (look at the last post to see the picture.)

The Soup

1. Homemade chicken stock

2. Chicken

3. Carrots

4. Celery, mushrooms

5. Mushrooms

6. Quinoa

7. Salt

The catch up.

June 11, 2010 at 7:26 pm (Uncategorized)

Right now, I am on the fourth week of a five-week diet. The diet I am on is a anti-inflammatory diet, and it is pretty much a standard elimination diet where you take 75% of the foods you eat, out of your diet for a few weeks. The diet eliminates all sweeteners, red meats, dairy, wheat’s and peanuts. I personally also eliminated corn from the diet because I was intolerant to Corn up to third grade. Besides the food that is eliminated from the diet, I can eat as much food as I want at a meal as long as I follow the other rule of proportions. To every 1/3 protein and grain I eat I must have 2/3 fruits and veggies. So if I eat 2 eggs I must have 3 big mushrooms and a apple. The only exception is breakfast, where it is 1/2 and 1/2. Another rule is that I must have five meals a day; this is so I make sure I am getting the nutrients I need. It also makes it so if I eat, it counts as a meal thus eliminating snacking.  These are the rules I follow for the first three weeks (or for me the first 4 weeks). There are a few more tricks to the first three weeks of the diet, but they are the presenter’s style to the diet and I fear if I said them I would be breaking copyright laws, but this is the general gist of things. On week four, what I am suppose to be doing is testing the food to see if they can go back into what I eat, But unfortunately I am a week behind because of finals so I will explain what to do on the forth week, next week.

That was the diet and now its time you got to know me. When I started the diet three weeks ago I was 354 pounds, I was a very, VERY unhealthy indusial. I slowly gained this weight after third grade when I lost my intolerance to Corn and I gained a wide range of Food I was able to eat. Up until now, I ate an unhealthy and unbalanced diet. That mostly consisted of going out to eat at restaurants. Now though with my moms loving and financial support, (My mom is also on the diet, maybe I can get her to blog too) I am planning to lose all my extra weight, but for this summer I am planning at least to get out of the 300 range. In addition, I hope by the end of the year I will no longer be obese and I will just be overweight…Oh and I forgot to mention after the first three weeks of this diet, I am down to 335 pounds, a total of 19 pounds lost. Well on my way to achieving my goals

Now that a caught you up to speed with the diet and where I am, it is time to do a daily report. School got out yesterday. Therefore, this now gives me some time to walk and write this blog. On my first walk, I went up to a town that is by where I live and then I walked back home, According to Google maps, the town is a little over 2 miles both ways. I didn’t even realize that I walked 4 miles today. The walk took me about an hour and a half. Yeah I’m slow I know I will speed up in time, don’t worry. In the next few days, I will in my daily reports talk about what I am eating, give out recipes, and show pictures. Although, for today I have only eaten breakfast, and it was a lame breakfast, before posting and I just wanted to catch everyone up to were I am and to send the first post off.
